It may seem basic, but it’s important that you have and are using the proper measuring cups. Every recipe calls for measurements and you need the right measuring cup.  Wait, isn’t one cup of liquid one cup of liquid, no matter what cup it is in?  Yes, but how you measure something can make a big difference in how your recipe actually turns out.  One cup plus 1/8 of a teaspoon of an ingredient can change how some foods cook or bake.  Baking is a science and measurements matter.

It’s common sense, but liquids are different from solids.  They act differently and need to be measured differently.  When you are baking, you will have two kinds of ingredients.  Some will be wet (liquids) and some will be dry (solids).  If you want your recipe to turn out properly, you will need to make sure that you have measured each one with the proper measuring cup.

Measuring cups for liquids are designed so that you can pour the liquid into the cup and see the amount of liquid through the cup.  There will be markings on the outside of the cup showing amounts, allowing you to add just the right amount.

What happens when you use a dry ingredient cup for measuring liquids?  To get one cup of liquid, you need to fill a one cup dry ingredient measuring cup right to the brim.  No more or you will spill, any less and you don’t have enough.  Then you have to move that cup to the bowl you are using and pour it in without spilling.  Yes, it can be done but the odds are you will lose some of the liquid.  There is no need to take that chance, just use a liquid ingredient measuring cup.

Measuring cups meant for liquids are usually glass or plastic and are clean.  They will have markings on at least one side of the cup.

Dry ingredients are measured in an entirely different way.  The cups used are solid, with a marking on the handle to tell you what the amount will be when you fill the cup.  You add your dry ingredients to the cup (flour, sugar, cocoa and the like) and whisk the top of the cup with a flat edge, like a knife.  Once you have done that, your cup is holding exactly the amount listed on the handle.

Using a cup meant for liquids to measure dry ingredients is almost impossible.  You can add the ingredient up to the line indicating the amount you want, but it’s impossible to level it out.  Using this method you never get exactly the amount of dry ingredient that you need.

Measuring cups for dry ingredients are made from plastic, silicone or aluminum.  They are lightweight and very easy to use and clean.
